Garnish:

Red wine float

How to make:


Measure and mix all ingredients together in mixing tins, excluding the red wine. Add fresh ice and shake vigorously until tins frost on the outside. Strain cocktail through a fine mesh strainer into a cocktail coupe. Float the red wine on top. Enjoy.

60 ml Patrón Extra Añejo Tequila
30 ml Strawberry sugar syrup
22.5 ml Lemon juice (freshly squeezed)
7.5 ml Peated whisk(e)y
15 ml Suze gentian liqueur
Top up with Rioja (Crianza) red wine

Part of the inspiration for this cocktail is from the new world we've been thrust in to and the need to pivot, change and adapt. We are primarily a cocktail bar at Tavern Law, but of course carry a small wine selection. We needed a way to use the rest of a bottle after the first pour, as not to be wasteful. That being said, I don't need much of an excuse to add wine to a cocktail, the depth and length on the palette wine adds really rounds out the profile of this drink.
The second part of my inspiration comes from thinking outside the box of what a margarita is supposed to be. Obviously we want to taste the tequila, with a sweet vs. acid balance. But there are many opportunities to fit sub flavor profiles in between those set parameters. Dry, herbal, smoky and fruity are just a couple of profiles that describe this cocktail. I hope you enjoy it as much as I do.
