1. Sir all ingredients with ice.
2. Fine strain into glass
Garnish:
1. Using a vegetable peeler, remove one long, thin strip of grapefruit peel. Try to avoid taking too much of the white pith (albedo).
2. Blanch the peel in boiling water for 1 minute, then immediately transfer it to an ice bath. Repeat this process 2–3 times to reduce excess bitterness.
3. Combine the sugar and water in a saucepan, bring to a boil, and stir until a clear syrup forms.
4. Add the grapefruit peel to the syrup and let it steep over very low heat for 20–30 minutes. It should not boil; instead, allow it to cook gently.
5. Remove the peel from the syrup and place it on parchment paper to dry for 12 hours.
