First, set your mint leaves at the bottom of your Collins glass, gently muddle then and then add ice.
then, combine all the ingredients, except the tonic water and the mint leaves into a shaker thin and throw your cocktail about 4-5 times. finally Strain into the glass and top with elderflower tonic
Green apple cordial
4 Granny Smith Apples*
1 cup White Sugar*
2.5g Malic Acid
1.5g Citric Acid
1. Acid Base: 1 min.
Add your 2.5g malic acid and 1.5g citric acid directly into the bottom of your juice collection jug.
2. Juice: 2 mins.
Juice the 4 apples. Swirl the jug immediately to dissolve the acids into the fresh juice.
3. Dissolve & Heat Shock: 2 mins.
Pour the green juice into a saucepan and add the 1 cup of white sugar. Warm over medium heat for just 60 seconds, stirring until the sugar completely dissolves and the liquid is hot to the touch (do not boil it).
4. Remove from heat. Skim any froth off the top with a spoon, let it cool, and pour it into your jar or bottle.
