Chill the glassware: Fill an elegant, thin-stemmed geometric coupe or martini glass with ice or place it in the freezer ahead of time to ensure it is perfectly chilled.
Combine the ingredients: Pour 45 ml Adriatico Bianco, 10 ml Yellow Chartreuse, 25 ml fresh (and finely strained) lemon juice, and 40 ml Elephant Bay Peach Ice Tea into your shaker.
Add the salt: Toss one light pinch of Maldon sea salt directly into the shaker. Crucial step: The salt goes strictly into the mix to dissolve completely during the shake, acting as a flavor enhancer rather than messing with the texture on top of the foam later.
The Shake (Emulsification): Pack the shaker to the brim with large, solid ice cubes. Snap it shut and shake hard and rhythmically for at least 12–15 seconds. This is essential to whip up that dense, velvety, dairy-free foam layer.
Double Strain: Dump the ice from your chilled glass. Double strain the cocktail through a Hawthorn strainer and a fine mesh tea strainer into the glass to catch any ice shards and keep the surface completely smooth.
The Perfect Spice Finish: Lay a straight card or stencil precisely over exactly one half of the glass. Gently dust the Quatre-Épices from a short distance over the exposed foam, then lift the card straight up to reveal a razor-sharp diagonal line. Serve immediately.
