Named after the second highest mountain in Tohoku and situated in Tohoku, between Akita and Yamagata, the mountain is officially Chokaisan but is commonly known as Akita-Fuji on the Akita side. Made from rice polished 70%, Koji, brewer's alcohol and corn syrup.

Appearance:

Almost crystal clear but with the merest tint of greeny straw-yellow.

Aroma:

Delicate apple, dried grass, passion fruit and pavement after rain minerality.

Taste:

Dry and delicately spicy. Grassy and straw notes with herbs and apple fruit.

Aftertaste:

Delicately spicy and herbal, apple and dried grassy finish.

Overall:

Dry and complex with apple, grass and delicate herbal spice.
