Distilled with 100% Agave Espadín (Agave Angustifolia) from Valley of Tlacolula, Oaxaca (rocky calciferous soil) by Don Cosme Hernandez & son Cirilo in San Baltazar Guelavila village, Tlacolula, Oaxaca. Fermented using wild yeast in open pine vats and double distilled in a 280 litre copper pot still

The Alipús brand is owned by Los Danzantes who’s Production Manager, Hector Vásquez Abarca oversees production by palenqueros (mezcal producers) in a number few villages to produce mezcals under the Alipus name.

Appearance:

(batch 003/10SBG) Crystal clear.

Aroma:

Fairly pungent tar smoke nose with faint char-gilled green pepper.

Taste:

Lightly sweet, round, smoky bacon, tar palate with herbal fruitiness.

Aftertaste:

Smoky, peaty, bacon with lingering tar flavour.
