Relased as part of Diageo’s 2013 Special Releases, this is the eighth release of unpeated Caol Ila from a once a year production of unpeated malt. Aged in a mix of refill American oak, rejuvenated American oak and sherry seasoned European oak casks. Bottled at natural cask strength.

Named after Billy Stitchell who has worked at Caol Ila Distillery for 50 years – 15 of which as Manager. Billy follows, his father, grandfather, great-grandfather and great-great-grandfather to be the fifth member of his family to work at the distillery.

Review and Tasting

Appearance:

Clear, pale golden amber.

Aroma:

Dried apricot and almond with lemon zest. Water releases treacle and honeyed notes.

Taste:

Light and yet chewy with discernible oiliness. Honeyed nutty notes, dried apricot and citrus.

Aftertaste:

Nutty biscuity finish with faint smokiness and lingering lemon zest.
