Coupe glass

Garnish:

No garnish.

How to make:

Coat coupe glass with 2 sprays of absinthe. Mix all ingredients except for cava and absinthe in a mixing glass. Strain and pour into coupe. Top with cava.

Green Apple Juice:
Juice fresh green apples and mix a quart with 5 grams of ascorbic acid for preservation.

1 fl oz Hayman's Old Tom Gin
1/2 fl oz Fino sherry
1/2 fl oz Lime juice (freshly squeezed)
1/2 fl oz Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix)
1 fl oz Apple juice/apple cider (cloudy & unsweetened)
2 dash Absinthe verte
1 pinch Salt (sea salt)
Top up with Cava sparkling wine
