Spray of orange bitters, grated nutmeg.
How to make:
Combine all ingredients except ginger beer in a tin and shake with ice, then discard ice and dry shake. Pour cocktail into a coupe glass, then top with ginger beer. Spray one or two spritzes of orange bitters over the cocktail (to smooth out the bubbles in the foam and add aroma) then garnish with freshly grated nutmeg.

| 1 fl oz | Spiced rum |
| 1/2 fl oz | Amaretto liqueur |
| 1/2 fl oz | Lemon juice (freshly squeezed) |
| 1/2 fl oz | Cherry juice |
| 3/4 fl oz | Egg white |
| 2 fl oz | Ginger beer |
