How to make:

Steep classic English Christmas tea in hot 2:1 syrup for 6 minutes and cool off. 2 dl syrup for 1 tablespoon tea. Use 1/2 shot of this syrup.

Build everything except Champagne in shaker and add 1 strip of lemon zest, shake and double strain in chilled coupe. Float the Champagne and garnish with lemon wheel.

1/2 fl oz Heering Cherry Liqueur
1 1/2 fl oz Tanqueray London Dry Gin
3/4 fl oz Lemon juice (freshly squeezed)
1/2 fl oz Monin Pure Cane sugar syrup (65.0°brix, equivalent to 2 sugar to 1 water)
1 dash Angostura Aromatic Bitters
3/4 fl oz Brut champagne/sparkling wine
