Opened around the same time as the London bar with the same name, Gibson is the latest offering from the team who brought you Jigger & Pony, Sugar Hall and The Flagship, downstairs. It occupies the first floor of a historic Singapore clan house in Bukit Pasoh - co-owner Guoyi Gan is a member of the Gan clan which own the building.
The concept here is a tribute to the Gibson cocktail, the dry martini garnished with a pickled onion. The signature serve blends two different gins and comes with a selection of sides - Japanese pickles, a house-pickled onion and a deliciously liquid smoked quail's egg - to bring out the umami flavours. To enjoy it at its best, pair with one of their impressive selection of oysters from America's Pacific North-West.
Yet there's more to Gibson than Gibsons and oysters. The 16-strong menu of classically led cocktails includes theatrical affairs such as the Botanic Garden, served in a glass bird's nest garnished with flowers and leaves, and a spectacular Blazer, flamed from glass to glass with high style. Like Jigger & Pony, it's hard to fault.
