Gem
Pineapple shines in this cognac-influenced Daiquiri. Best when made with an aged Jamaican blended rum to impart a touch of funk

It’s what I had on hand in the cognac department. I was concerned its taste would overwhelm the drink but it worked out well enough.

Fair enough. To our taste Remy Martin is just a bit sharp so we generally go with Martel. But the Gem is quite a 'big' drink so can probably stand up to a 'big' cognac. Cheers.
