Ingredients:
1 oz Caribbean blended rum aged 6-10 years
1 oz Rémy Martin V.S.O.P. cognac
34 oz Lime juice (freshly squeezed)
13 oz Monin Pineapple Syrup
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
4 drop Difford's Daiquiri Bitters

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of dehydrated lemon slice wheel and grated cinnamon.
  3. SHAKE all ingredients with ice.
  4. STRAIN into ice-filled glass.
  5. Garnish with dehydrated lemon slice floated on surface and dusted with freshly grated cinnamon.

Adapted from a recipe in William Schmidt's 1892 The Flowing Bowl: What and When to Drink.

The Gem.
A mixing-glass,
The juice of a lime,
A little pineapple syrup,
A spoonful of sugar; dissolve well;
½ drink of Santa Cruz rum,
½ drink of brandy.
Mix this well, fill your glass with ice, and mix again; strain into a fine glass; place a slice of lemon on top and grate a little cinnamon upon it.

Does have some latent, underlying interest, but it shows up too late. It's the fruity top notes of the base spirits mostly.. I subbed more pineapple syrup for the sugar syrup and I regret it? At any rate, not much pineapple flavor, just faint aromatic overtones... This drink, however, has potential, but any changes have to be subtle and surgical.

A nice,dry, citrusy cocktail. At first I thought the dusting of cinnamon was and odd addition, but I was wrong. It really added a nice finish to the cocktail and went quite well with the rum/Cognac.

Also lacking pineapple syrup I used 15ml sugar syrup and 10ml pineapple juice and thoroughly enjoyed it especially the mix of rum and cognac.

There aren’t may ingredients I don’t have- but pineapple syrup was one. I considered passionfruit syrup for a variety (Simon- you can call that “The Great Man” and publish it)…! But instead I used the Planation Pineapple Rum- and it turned out well! The cinnamon is a good touch.

Having an unseasonal warm day and thought this would be a great way to cool off before dinner. Nice hints of pineapple, but not overpowering. Everything is balanced. As will all rum cocktails, wonderful and refreshing.
