Beetroot & Vanilla Daiquiri
Just as the name suggests, only the beetroot pervades this otherwise classic Daiquiri more than the vanilla. Consider using vanilla-infused rum

Delicious. I used plain sugar syrup and vanilla extract and it works so well.

Oh wow!! That his is absolutely delicious!! The beetroot and the rum work so well together! I also added a couple of drops of vanilla extract to really get the vanilla flavour, and they all work together. With the lime to balance out the earthiness of the beetroot. This is a fantastic cocktail. Love it.
