I mean... the lack of bourbon steals some character from the Paper Plane. But hey, I have friends that don't like a bourbon flavor, so this is a good option for some people that want a mellower twist on a Plane.
Try a woody cognac (like an XO) and cut the lemon back to 2/3 oz when using cognac instead of bourbon (I also increase the Aperol back up to 3/4 oz). The interplay between the cognac, the Aperol, and the Nonino is even better than the result using bourbon, IMHO.
