I do not use my Absinthe very often; especailly as a base liquor. This was nice. I would back off the water a bit. I did back off the syrup a bit as well so this had a nice sour taste, but the anisette was muted by the water. Color was a yellow peach as the Absinthe loses it's collor to the bitters and muted by the egg white. The froth was perfect!
Smashing. Absinthe was the first bottle of alcohol I bought on my 21st birthday (back when you couldn't get the real stuff). This cocktail was amazing. Absinthe if forward with a nice hint of sour from the lemon. Would definitely have this one again.
Mine was nice light green color and very foamy. You can taste the anise, but its is quite faint. Happy that went past the prejudice of absinthe :)

This cocktail didn't turn out anything like the photo. The angostura gave it a light peach color, and the egg white frothed nicely (unlike the photo). It's a bit too sweet for my liking. I would maybe use half of the recommended amount of simple syrup.
