World traveler, Mario left his country really young to live across Europe and Middle East collecting different experiences in five star hotels and high level bars as Four Seasons Hotel Dubai, Marriot group and Galvin Brothers (Star Michelin restaurant company).
After successful years in Baccano, is actually working in Chapter Roma, bringing a new street hotel bar filosophy, mixing italian italian style with international touch.

5ml Itriana Olive Brine
5ml Sugar syrup (2:1)
30ml Lemon juice
Caprino cheese rum:
100gr formaggio/lt rum. Agitare ogni 2h. Lasciare in infusione almeno 12h. filtrare con filter coffee.
