Tried it one evening when I only had a mezcal available; do not attempt this at home! Ugh. Round two was with vodka, of which I just for some reason do not like the taste - but the drink was much better. Next time, it will be with a reposado. Taste as you add the coffee liqueur - watching for too much. Your pineapple juice needs to offset the coffee just right. If the pineapple was not giving you STRONG flavored juice, go easy on the coffee liqueur.

As a Northern California wino who adores French wines too, I had to stop and consider the consequences of this Tio Pepe. It is as described above, mineral forward, more dry than what I imagined any liquid made from grapes would ever become. But so complex and full of hidden pockets of flavors - presenting themselves once on the bouquet, then again and again on the tongue and after each sip. I proceeded to use it in a Spring Green to counter the green chartreuse & St Germain - fantastic!
