Chopped almonds (peeled)
Mix all ingredients, except the cream, in to a mixing glass and stir for 10-15 seconds.
Pour the cocktail in to a Martini glass.
Whip the chestnut cream so its lightly whipped and float on top of the cocktail.
Garnish the cocktail with chopped peeled almonds.

| 1 fl oz | Ron Zacapa 23 Sistema Solera Gran Reserva Rum |
| 2/3 fl oz | Cocchi Storico Vermouth di Torino |
| 2 dash | The Bitter Truth Spiced Chocolate Bitters |
| 1/6 fl oz | Vanilla Syrup (1:1.75, 3 vanilla pods for 3L syrup) |
| Float | Chestnut cream (10cL cream, 4cl liqueur de chataigne, 1cl sugar syrup (1:1.75)) |
