How to make:
MUDDLE ginger in base of shaker bowl. DRY SHAKE the next six ingredients and SHAKE with ice. Strain into chilled glass. TOP UP with Champagne.

| 1/3 fl oz | Rhum Clément Select Barrel |
| 1 fl oz | Mandarine Napoleon liqueur |
| 1/3 fl oz | Giffard Banane du Brésil liqueur |
| 1/3 fl oz | Lime juice (freshly squeezed) |
| 1/2 fl oz | Egg white (pasteurised) |
| 1 dash (4 drops) | Grapefruit bitters |
| 1 fl oz | Brut champagne/sparkling wine |
