The recipe used to make this beer is said to be inspired by one dating back to the establishment of abbey Notre-Dame de Val-Dieu in 1216. This monastic beer is lightly filtered but undergoes secondary fermentation in the bottle.

Appearance

(best before 12-Dec-13) Clear, (when poured to leaf yeasty sediment in bottle), very dark amber-brown with medium beige head which fades to lasting layer of foam leaving heavy lacing.

Aroma

Caramel, white baguette crust and burnt coffee with a noticeable of drunk's breath alcohol, sticky prunes and faint clove spice.

Taste

Almost a liquid meal, this heavy ale is slightly sweet with heavily roasted barley flavours, dark fruit, slightly burnt raisins and mocha coffee.

Aftertaste

There's the slightest touch of peat smoke to fruity, charred malt finish.
