This beer is not pasteurised or filtered and is carbonated by secondary fermentation in the bottle so yeast cells cloud the beer and form a sediment. A ritual has developed of gently rolling the bottle from side to side before serving, though no more than three times, to agitate the sediment.

Golden amber with creamy small white dead and yeast cells floating in beer from sediment.
Fresh cereal grain nose with yeasty citrus hop aromas.
Slight metallic grapefruit and delicate cardamom flavour with accompanying citrusy sourness and light hoppy bitterness.
Slight saltyness to the malty, citrus finish.
