James Pimm is usually credited with creating this quintessentially English summertime thirst-quencher. He began trading as a shellfish-monger in 1823-4 on London's Lombard Street, before moving to nearby number 3 Poultry, also in the heart of the City. There he established Pimm's Oyster Warehouse.

Clear, dark reddy-brown amber.
Watered down and spiced (cinnamon) cola with orange zest, freshly roasted coffee and complex herbal aromas.
Bittersweet, orangey, herbal and mildly bitter with camomile, cinnamon, star anise, dark liquorice, chocolate and rootyness.
Slightly bitter with lingering liquorice, rooty and herbal notes. Long lingering cola and rooty bitterness.
Reminiscent of an Italian amaro. Mix with lemonade or ginger ale to make a classic Pimm's Cup but also consider as a bittersweet cocktail ingredient.
