Made with both Agave Espadin (Agave angustifolia) and wild Agave Mexicano (Agave rodacantha), naturally fermented in open pine vats and double distilled in copper pots, this also undergoes a third distillation with fruit and spices and a turkey breast inside the bell of the still.

This Mezcal is produced once a year in November and is traditionally made for weddings and baptisms.

Review and Tasting

Sampled on 01/02/2011

Appearance:

Crystal clear.

Aroma:

A wonderfully aromatic and complex nose with almond, pecan pie, aniseed, and marzipan.

Taste:

Whatever you do, go easy when you dilute this delicate monster - keep above 45%. Delicate smoke, fruity spice with mellowing sweet almond. It's big, and yet strangely tame.

Aftertaste:

Salty smoke lingers on the palate like a big fat cigar dowsed with salty soya sauce. Not for tender palates but discerning drinkers will rejoice.
