In Scotland they have ‘new make spirit’, in America they call it ‘white dog’. In the Gascony region of France the spirit distilled from grapes which when aged will become cognac is known as ‘eau-de-vie de vin’. This example by Merlet is distilled from mostly Ugni Blanc with some Colombard grapes.
Eau de Vigne is a versatile cocktail ingredient and a great opportunity to sample the spirit that Merlet cognacs mature from.

Crystal clear.
Fruity – an empty jar that held raisins, pear and minerality with faint floral notes, cardamom and white pepper spice.
Faint sweetness on a dry palate with raisin fruit and light black pepper spice.
Mineral notes return in the finish with faint black liquorice. Overall: Dry and yet fruity. A very interesting base spirit for cocktails.
