Hibiki means ‘chorus’ or ‘harmony’ in Japanese and the blends which Suntory bottle under this esteemed title have a reputation for being beautifully balanced blends. Hibiki 30 has been named The World’s Best Blended Whisky, not once, but twice, in 2007 and 2008.
The other father of Japanese whisky, Shinjiro Torrii, founded his Suntory Company (Sun + Torri = Suntory) in 1899, having making a fortune marketing Akadama Port Wine, a sweet tasting wine which he promoted as a health tonic. Torii started constructing Japan’s first malt whisky distillery, Yamazaki, in 1923 on the outskirts of Japan’s ancient capital ‘Kyoto’ in a narrow valley sandwiched between Mt. Tennozan and Mt. Otokoyama.
The malt whisky’s in Hibiki blends are distilled at Yamazaki and Hakushu distilleries. These are blended with Japanese grain whiskies and some malt whisky matured in Umeshu casks (casks that have been used in the ageing of plum liqueur). The blended whisky is filtered through bamboo charcoal, which contributes to Hibiki’s sweet and mellow flavour.
