Palm Ridge Reserve is distilled at Florida Farm Distillers, a micro-distillery located on a small cattle farm near Umatilla, Florida. A mash of Florida corn, barley malt, toasted flaked rye and rye malt is fermented on the farm and distilled in a 60 gallon copper column copper still.

Palm Ridge Reserve is aged on the farm in small five gallon charred oak casks which mature the whiskey very quickly, apparently in less than a year. The whiskey is bottled without chill-filtration and only around 500 cases per year are produced.

Review and Tasting

Sampled on 07/07/2012

Appearance:

Clear, coppery amber with polished bronze highlights.

Aroma:

Wonderfully grainy bread with pretzel spice, brazil nuts and slightly burnt fruit cake.

Taste:

Punchy, yet integrated and strangely soft with a touch of maple sweetness, hazelnut and dry toasty oak. Subtle nutmeg spice. A splash of water reveals apricot fruit and almond.

Aftertaste:

Lightly cinnamon spiced, nutty, malty milk chocolate.
