Made according to an 1883 recipe using small reddish bananas from Costa Rica which are allowed to ripen until mid-brown. The ripened bananas are peeled, and the flesh macerated in 60% neutral alcohol for 7-10 days before small-batch distilling to concentrate the flavour.

The banana skins are macerated in alcohol to produce this deep amber liqueur.

Appearance:

Clear, deep amber.

Aroma:

Pungent, overripe banana and flambéed banana.

Taste:

Silky mouthfeel. Rich but balanced with intense overripe banana. Light cinnamon and black pepper spice with faint chocolate.

Aftertaste:

Long overripe banana finish.

Overall:

Its dark colour and intense overripe banana flavour set this superb crème de banana apart.
