Dirty Sue Olive Juice was created in 2008 by bartender Eric Tecosky at legendary Los Angeles restaurant, Jones Hollywood after one day finding a gallon jar of olives contained olives but no juice as his colleagues had already used it to make Dirty Martinis.
Eric released the potential market was not only due to many American bars use the juice before they finish all the olives in a jar, but also due to the quality of that juice. Olive juice (or brine) was originally packed in the jars to keep the olives from spoiling - not to be used in cocktails so in most cases the quality of that brine is poor. Dirty Sue is the twice-filtered juice of olives from Spain's Sevilla region created for the sole purpose of making the perfect dirty martini.

Hazy, deep golden yellow.
Pickled olive, fried onion with basil and thyme spice. Faint note of British tomato ketchup crisps.
Strongly flavoured salty, olive with vinegar acidity and onion bite.
Just swallowed seawater-like brine. On its own, hardly a delicious beverage but in a Dirty Martini, it's just right. When compared to using brine from a jar Sue is so Dirty that you'll need less to achieve the same flavour, so diluting the gin less.
