Thin slice of lemon, make two small cuts at 5 and 7 o'clock, and attach to side of glass to resemble the Sun.
Add 2oz Chilled Pallini Limonzero to a shaker, and drop in the 2 tablespoons of chopped celery. Use the inner celery stalks, for a lovely mild flavour. Muddle well.
Add 10z Chilled Dealcoholized Sauvignon Blanc, 2 dashes of Cardamom Bitters, and a pinch of sea salt flakes.
Add ice and shake briefly for just 10-12 seconds. Do not over dilute.
Double strain into a chilled martini glass.
Garnish with the lemon slice.
