Oro di Roma by Gareth Hives

Serve in a

Rocks glass

Garnish:

Amalfi lemon wedge speared with two golden cocktail sticks representing the legion's aquila.

How to make:

Add the Pisco and lemon juice to the shaker and then gently muddle a good pinch of coriander into them. You only need a couple of gentle grinds, nothing too urgent.
Now add the Limoncello and Cynar, plenty of ice and shake it like you mean it.
Double strain into a rocks glass filled with ice.
Garnish.
Indulge.
Notes:
You will probably get a few tiny green flecks make it through even the finest double strain, I say lean into it, they actually look lovely.
I've added a picture of what I'm calling the 'pinch' of coriander for reference. You can adjust to taste obviously.
And the same cocktail with a different idea for a garnish, one that better advertises the presence of coriander.

1 1/2 fl oz Pallini Limoncello liqueur
5/6 fl oz ABA Pisco
5/6 fl oz Cynar artichoke amaro
1/2 fl oz Lemon juice (freshly squeezed)
1 pinch Coriander/Cilantro leaves
