Apples are hand-picked from October to mid-December to produce cider which is aged in oak casks for 10-11 months. This is double-distilled in two wood-fuelled stills in September. The distillate is aged in Limousin oak casks until the 3rd year when it is transferred to finish aging in large oak vats
