Roquette Sour

Garnish:

Gratted parmesan cheese Ground black pepper

How to make:

In a Shaker:
Add 4 slices of fresh cucumber
Add 5 rocket's leaves
Muddle it
Add 50 mL of old tom gin
Add 12,5 mL of fresh lemon juice
Add 15 mL egg white
Add Ice cube and shake well
Then Dry Shake
Strain in a cold Nick & Nora
For the garnish use some grated parmesan cheese and ground black pepper.
Enjoy

1 2/3 fl oz Hayman's Old Tom Gin
4 slice Cucumber (fresh)
1/2 fl oz Egg white
5 leaf Rocket/Arugula salad leaves
5/12 fl oz Lemon juice (freshly squeezed)
