How to make:

Build all ingredients in tin, dry shake to emulsify the ingredients with the egg to create a foam, then wet shake to dilute the liquids down. Strain into a collins glass filled with cubed ice, then gently top with soda ensuring no foam spills over the sides as it grows.

1 1/2 fl oz Hayman's Old Tom Gin
3/4 fl oz Lemon juice (freshly squeezed)
1/2 fl oz Monin Cherry Syrup
1/4 fl oz Monin Orgeat syrup
1/2 fl oz Egg white
Top up with Schweppes Soda Water (Greek pack)
1/2 fl oz Apricot (brandy) liqueur
