
Lime zest on the edge of the glass and 3-5 drops Melissa oil
Into stir glass pour 60 ml of Hayman's Old Tom Gin, 7.5 ml of Martini Riserva Speciale Bitter following with 45 ml of handmade bilberry cordial. Stir it up for 10-15 seconds and strain it into pre-chilled coupe glass. For garnish we use 3-5 drops of Melissa oil on top plus fresh lime zest on the edge of the glass.
How to make handmade bilberry cordial: mix up 1 litre of water, 25 g of tartaric acid, 15 g of malic acid, 10 g of citric acid, 750 g of sugar and 10 g of sea salt. Into vacuum bag put 500 g of fresh bilberries, 10 g fresh mint and 20 g of lime zest. Into that very same bag we should pour previously combined mix of acids, water and salt. Vacuum seal the bag and put it into sous-vide for 5 hours and 60° C. After 5 hours we need to strain our cordial through superbag.
