Review

Surely Chicago's best hotel bar, Sable is as impressive and inviting during the day as it is by night, while the drinks menu is so all encompassing that it kicks off with a contents and epilogue page.

Within the 32 page menu, Sable's signature creations are handily categorised by style while other notable cocktails from the decades are listed according the period when created. Be sure to try Mike Ryan's The Sovereign cocktail with rye whiskey, Kalani coconut liqueur, Green Chartreuse and Ramazotti amaro.

The spirits selection spans some 20 feet of shelving three bottles deep and shouts quality as well as quantity. There's even Green Chartreuse on tap. While the beer selection is comparatively compact it is well curated with a style of beer for every palate - bland lagers and 'lite' beers accepted.

The space is modern in its design with the revolving door leading into a long rectangular room with the bar counter running two-thirds its length. During the day Sable is bright and airy with floor to ceiling windows allowing the sunlight to flood in.
