Juniper berries are traditionally distilled in a copper still in Vilafranca del Penedés. Separately, fresh Mediterranean lemon peel from Murcia, cedrat peel from Valencia and Spanish laurel, along with Thai kaffir lime leaves, Indian black cardamom and Egyptian coriander seeds are each steeped....
in neutral spirit for 4 to 10 days prior to being individually distilled using a low-pressure/low-temperature (25°C) Rotaval rotary evaporator. These distillates are then blended together to make Ginraw.
Ginraw was first envisaged by Roger Burgués and Luis Jáuregui, both experienced spirits marketers from Barcelona. Like assembling a boy band, they recognised the importance of recruiting the right talent to produce their Barcelona inspired gin - a perfumer, chef, sommelier and bartender - all from Barcelona:
• Rosendo Mateu - Maître Parfumeur
• Xano Saguer – Pastry chef
• Sergi Figueras - Best Spanish Sommelier 2012 and president of the Catalan Association of Sommeliers
• Javier Caballero - mixologist and founder of Liquid Experience
Ginraw is made in batches of 5,000 individually numbered and very distinctively designed bottles. The acid etched bottle’s oversized screwcap is made from ash wood.
