The garnish of this drink are flakes of Grana padano to give that Umami part

How to make:

Drink= Mix and stirr
1) Cool the glass
2) Cool the mixing glass
3) Add all ingredients to the mixing glass and dilute
4) Pour into the glass and garnish with flakes of Grana Padano

1 1/3 fl oz Hayman's Old Tom Gin
1 1/3 fl oz Cocchi Storico Vermouth di Torino
1/3 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
1/8 fl oz Balsamic vinegar of Modena
4 dash Angostura or other aromatic bitters
