Soju 燒酒, literally 'burned liquor', is a clear distilled spirit native to Korea with most brands now produced in South Korea. Traditionally made from rice, wheat and barley, in recent years the use of rice, potatoes, sweet potatoes and tapioca has become commonplace. Its alcohol content varies from 16.5% to 45% alc./vol.
