As a Northern California wino who adores French wines too, I had to stop and consider the consequences of this Tio Pepe. It is as described above, mineral forward, more dry than what I imagined any liquid made from grapes would ever become. But so complex and full of hidden pockets of flavors - presenting themselves once on the bouquet, then again and again on the tongue and after each sip. I proceeded to use it in a Spring Green to counter the green chartreuse & St Germain - fantastic!
Agreed! However, the Spring Green (created in 2007 by Kitty Gallisá at Nopa in San Francisco) originally calls for Manzanilla sherry. I'll add the Spring Green cocktail to Difford's Guide after my next photography session with Dan.
