Tried out a Dirty Gibson:
60mL gin
10mL dry vermouth
10mL brine from the onion jar

Crisp, clean. A fantastic tasting Martini that paired well with Sushi.

Sounds like a fantastic pairing with sushi. Maybe try experimenting with pickled ginger brine as well.
