Rum, coconut water and Pedro Ximénez sherry are unusual bedfellows in a cocktail but work well together and are toned by lime juice and chocolate bitters

Instead of the coconut water, we go with 10ml coconut rum liqueur. And serve it in a Nick and Nora glass. A beautifully delicate cocktail.

Having found some coconut water we went around again. With the coconut water it's even more beautifully delicate and subtle.

The coconut water lengthens it into a very sippable drink. Worth trying.
