Originally from New Zealand, Philip David now works in London as a mixologist at Balthazar. Phil started as a barista, quickly becoming part of the evening team working for Liquid Assets in the UK, then spending the next six plus years opening and running bars and beverage programs across the UK.
Phil returned to New Zealand in July 2011, where he was involved with several different projects, including Nectar Bar, Red Bar, the Foodstore and the craft cocktail lounge Cartel Bar. In September of 2013 he came back to the UK with Fun Bars Limited, working between three high volume cocktail venues, in Swansea and Cardiff where he developed cocktail menus and in-house training programs.

Method: Shake first 6 ingredients with ice and strain into ice-filled glass. Top with Soda.
• 35 ml Amontillado sherry
• 15 ml Cherry Heering
• 7.5 ml Bénédictine D.O.M.
• 7.5 ml Triple sec
• 15 ml Freshly squeezed lime juice
• 10 ml Grenadine syrup
• Top with Soda water
