Had made a note to try this again with “better” pineapple juice. Had just enough of my freshly-squeezed juice left over after him indoors made an “outrageous” Tiki drink for himself to make this and am very glad I did. Delicious! Each ingredient shining through.
This was unexpectedly very good. Desperately trying to use up a huge bottle of Chambord (a gift) and not being a huge fan of the whiskey family, I was a bit worried that this would not appeal. However, while quite sweet, it’s really a lovely blend of flavours. For my taste, I could perhaps use a bit less simple or cranberry next time to cut back the sweetness.
I made this tonight, and I only had sparkling rosé. It turned out rather nice in the end. Definitely quite boozy, the rosé was perhaps a little sweet, but the absinthe was clearly there and very tasty.
Need to check again with a less sweet sparkling, or back off the sugar syrup, because this was pretty nice.

We’re relocating so we have to drink the bar. Supplies are running low. Thus I made this with mezcal. It was surprisingly OK. Burnt flowers? Incense? Used 10 mL lavender syrup and no simple.
An Aston Martin-i, perhaps?
