Bonded Tennessee Whiskey is made using a mash bill of 75% corn, 13% rye and 12% malted barley and is aged for 4 to 5 years in West Tennessee White Oak char No. 4 barrels.
As per the exacting requirements of the 1897 Bottled-In-Bond Act, this Old Dominick Tennessee Whiskey is bottled at 100 proof.
The story behind Old Dominick
In 1866, 23 years after arriving in America as an Italian immigrant, Domenico Canale established D. Canale & Co., his wholesale food business. Among the products he stocked was a whiskey, sold in ceramic jars and bottles, he called Old Dominick.
In 1880, he developed a bourbon-based cordial named the Dominick Toddy with the iconic Dominicker Rooster on its label.
Just three days before Prohibition was ratified, Domenico Canale passed away at the age of 75, and his oldest son took over and expanded the business, becoming the exclusive regional distributor for Anheuser-Busch beers after Prohibition. Succeeding generations continued to grow D. Canale until the food and drink elements of the business were sold in 1991 and 2010, respectively.
In 2013, brothers Chris and Alex Canale decided to resurrect the spirit brand established by their great-great-grandfather, Domenico Canale, following the discovery of an unopened bottle of Old Dominick Toddy dating back to the late 1800s.
The first batch of spirit was distilled at their new Old Dominick Distillery in 2017, the first whiskey legally distilled in Memphis, Tennessee, since Prohibition. The first bottles of Old Dominick Tennessee Whiskey were released in 2022.
