In 1979 Danny Aikawa, a veteran Japanese bartender, sought to create a very special traditional Ume Liqueur. His dream was not realised until 2005 and since, each Autumn, so he begins the process of creating that year's Hoshiko liqueur from Japanese Ume plums, actually a type of apricot.

(2011 bottling) Slight haze, coppery golden amber.
Fruity, marzipan and cherry stones with fruit jelly, cinnamon and clove spice.
Sweet but with balancing tartness, cider apple, marzipan and apple pie with slight cinnamon spice.
Slightly tart cider apple and rhubarb.
