Aged for one year in American oak barrels previously used to age Four Roses bourbon, "just long enough to reach mixability peaks without losing its rainforest and sugarcane funk.", Novo Fogo say Chameleon "marries the savory identity of our Silver Cachaça with the vanilla notes of our oak-kissed Bar
Prior to using to mature Chameleon Cachaça, the ends are removed from the Four Roses barrels and the insides flayed to reveal fresh wood which is then lightly toasted to caramelise sugars in the oak. The rejuvenated casks are then reassembled and filled with Cachaça.
Novo Fogo Chameleon is bottled without chill-filtration.

Clear, pale golden.
Overripe banana and hazelnut with vanilla, nutmeg and oak slightly scorched while being freshly sawn.
Herbal and spicy with sweet grassy sugar cane and vanilla balancing dry, faintly smoky, oak.
Lightly spiced oak and grassy cane with vanilla and faint citrus.
Despite the influence of a full year in oak, Chameleon perhaps retains more of the grassy sweet sugar cane character than Novo Fogo's unaged Silver. If you can't afford to keep bottles of both unaged and barrel aged cachaça on your shelf, then Chameleon is a perfect middle of the road.
