Daddy Rack is a straight 3-year-old Tennessee whiskey that benefits from double Lincoln County Process charcoal mellowing (prior to going into cask and then again after maturation).
Daddy Rack is made with a mashbill of 80% corn, 10% rye and 10% malted barley. All the corn used is sourced from farmers within a 50-mile radius of the distillery in Columbia, Tennessee. The grain is milled and mashed in a 72-hour sour mash process.
The first distillation is in a copper column still, followed by a second distillation in a traditional pot "doubler" still to produce a spirit with an approx. 67.5% alc./vol..
The distillate then undergoes its first Lincoln Country Process filtration through a dense layer of sugar maple charcoal before filling into new light char No.3 American oak barrels.
The barrels selected for each 20 barrel batch come from specific locations in the Rackhouses with the desired temperature and humidity.
Before batch blending, the whiskey has a light second maple charcoal filtration. Each batch is then blended and bottled without added colouring, caramel, sugar or other additives.

Clear, golden amber.
Toasted and freshly sawn oak, tobacco leaf, maple, caramel and buttery vanilla fudge.
Slightly burnt/toasty and light cinnamon-spiced oak is mellowed by attractive buttery vanilla fudge with an enlivening tingle of cracked black pepper.
Moderately long with burnt/toasty oak and grain. Rye notes are more pronounced than on the palate with lingering cracked pepper dusted charcoal notes.
With just three years maturation, this whiskey is on the young side, but twice Lincoln County Process charcoal mellowing has worked its magic to integrate the spicy oak and amplify attractive maple, caramel, and buttery vanilla fudge. Given the category in which Daddy Rack sits, I feel compelled to compare and contrast: While I'd sum up Jack Daniels as being mellow with a distinctive popcorn note, Daddy Rack is toastier and more oakier with a touch of rye-like spice. Daddy Rack is a touch precocious but is loud in an attractive way.
