A South African sweet red sparkling wine from the Western Cape.

Made with a blend of hand-harvested grapes: 25% Sauvignon Blanc, 25% White Muscadel, 25% Shiraz, 20% Cabernet Sauvignon and 5% Pinotage. The colour was extracted from the skins during the first 24 hours in the cellar, with fermentation stopped by lowering the temperature to 0°C when a level of 7.5% alc./vol. was reached, leaving 75 g/l of natural grape sugar in the wine. The sparkle was created by infusing the wine with CO2.
