Garnish:

V-split Orange wedge, separated with a skewered maraschino cherry.

How to make:

Shake over ice everything except the tonic water until your tins are quite frozen to the touch. Proceed to strain the ice and dry shake to homogenize the egg white. Serve into a glass filled with ice and top up with tonic.

2 1/12 fl oz Hayman's Old Tom Gin
1/2 fl oz Egg white (pasteurised)
1/2 fl oz Honey syrup (3 parts honey to 1 water by weight)
3 dash Angostura or other aromatic bitters
5/12 fl oz Pierre Ferrand Orange Curaçao
1/2 fl oz St-Germain elderflower liqueur
Top up with Tonic water
